Lemon Chicken Piccata Meatballs

Ingredients

  • 2 Tbsp butter
  • 1 shallot, finely chopped
  • 2 Tbsp flour
  • 1 cup Holland House® White with Lemon Cooking Wine
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 Tbsp capers, drained
  • 24 oz fully-cooked frozen chicken or turkey meatballs
  • 1 lemon, thinly sliced
  • 2 Tbsp fresh parsley leaves

Directions

  1. Melt butter in medium saucepan on medium heat
  2. Add shallots; cook 2-3 minutes or until softened
  3. Stir in flour; cook 1 minute
  4. Gradually whisk in Holland House® White with Lemon Cooking Wine until blended
  5. Add broth, juice, capers and meatballs. Bring to boil
  6. Simmer on medium-high heat 8-10 minutes or until meatballs are heated through (165°F), stirring occasionally. Stir in lemon slices.
  7. Sprinkle with parsley before serving
