Ingredients

  • 1 pound raw jumbo shrimp, peeled, deveined (21/25 count)
  • 1 - 1/2 cups finely chopped green onions (9 - 10 onions), divided
  • 1 cup Holland House® White Cooking Wine, divided
  • 2 cloves garlic
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 bottle (8 ounces) clam juice
  • 8 ounces linguini
  • 1 small lemon, zested, juiced
  • 1/2 cup chopped fresh Italian parsley

Directions

  1. Combine shrimp, ¼ cup onions, ¼ cup wine and garlic in medium bowl. Set aside to marinate.
  2. Melt butter in medium saucepan on medium - high heat. Add flour; cook and stir 1 minute.
  3. Add wine gradually, while whisking constantly. Stir in clam juice; bring to a boil. Reduce heat to medium; cook 8 - 10 min. or until sauce thickens and coats the back of a spoon.
  4. Meanwhile, cook pasta as directed on package; drain.
  5. Add shrimp mixture and remaining onions to sauce in pan. Cook 4 - 5 min., stirring frequently, until shrimp is done.
  6. Remove pan from heat. Stir in lemon juice and parsley.
  7. Season to taste with salt and pepper.
  8. Spoon shrimp and sauce over pasta in large serving bowl; toss gently.

Tips

  1. Bottled clam juice enhances the seafood flavor of the sauce. 1 cup chicken broth can be substituted for the clam juice.
  2. Cooking shrimp directly in the sauce ensures they won’t overcook. Shrimp are done when pink and opaque, and they form a tight “c” shape. Overcooked shrimp tighten into an “e” shape.
