Ingredients

  • 2 bell peppers
  • 2 zucchini
  • 5 oz. white mushrooms, whole
  • 1 red onion
  • 2 Tbsp. olive oil
  • 3 Tbsp. Holland House® White Wine Vinegar
  • Zest of one lemon
  • Salt & ground black pepper

Directions

  1. Cut bell peppers into 1-inch pieces, slice zucchini into ½ inch thick rounds, remove the stems from the mushrooms and dice the onion into 1-inch pieces.
  2. Combine all the vegetables and remaining ingredients in a large bowl or resealable bag. Marinate for at least 20 minutes.
  3. Skewer the vegetables, making sure they are evenly spaced. Grill until tender, flipping occasionally, about 10-12 minutes.
