Ingredients

  • 2 bell peppers, cut into 1 - inch chunks
  • 2 zucchini, sliced into ½ - inch rounds
  • 8 ounces whole mushrooms, stems removed
  • 1 red onion, cut into 1 - inch chunks
  • 3 tablespoons Holland House® Organic White Wine Vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Zest of 1 lemon

Directions

  1. Combine ingredients in large bowl or resealable bag.
  2. Let stand 20 min. to marinate.
  3. Meanwhile, soak wooden skewers in water to prevent burning.
  4. Heat grill to medium.
  5. Thread vegetables onto skewers, spacing evenly.
  6. Grill 10 - 12 min. or until tender, turning occasionally.

Tips

  1. Use your oven: Marinate vegetables as directed. Heat oven to 450°F. Arrange in even layer on large rimmed baking sheet. Bake 30 - 40 min. or until tender and browned, stirring halfway. Or, broil vegetables on HIGH 15 min., stirring every 5 min. or until tender.
